Simple rice preparation tweaks can lower blood sugar spikes, suggests new research

Modest changes to how rice is cooked and paired , including adding fats, cooling, and reheating , can reduce its metabolic impact, new research indicates, although some claims remain contested.

White rice does not have to be a one-way ticket to a blood sugar surge, at least not if it is prepared and eaten with some care. The lead article, based on fitness commentator Thomas DeLauer’s approach, argues that several small changes can make a standard bowl of rice less metabolically demanding while also improving taste and texture.

One part of that case is rooted in food chemistry. Research published in Food Chemistry and later work on rice starch structure shows that cooking rice with lipids such as olive oil or palm oil can encourage amylose-lipid complex formation, creating a tighter crystalline structure that is harder for digestive enzymes to break down. Separate studies have also found that these complexes can reduce starch digestibility, especially in non-waxy rice varieties.

The article also leans on a second well-established tactic: cooling rice after cooking and then reheating it. That process increases resistant starch through retrogradation, which makes some of the carbohydrate less readily available for digestion. In practical terms, meal-prepped rice can produce a lower glucose response than rice eaten straight from the pan, particularly when combined with other ingredients that slow absorption.

Other suggestions are more mixed. Adding vinegar or lemon juice fits with broader evidence that acidity can slow starch digestion, and pairing rice with protein or fibre before the carbohydrate may blunt a post-meal spike. But the piece’s claim that omega-3 fats themselves improve blood sugar control is more disputed. Harvard Health has highlighted a large review of randomised trials finding that omega-3 intake did not improve glucose metabolism or cut diabetes risk, so that part of the argument is weaker than the rest. The overall message remains modest rather than magical: rice can be made less glycaemic, but the effect depends on preparation, pairing and portion size.
