A comprehensive 40-year study reveals that the way potatoes are prepared, especially frying, significantly influences their impact on type 2 diabetes risk, highlighting the importance of cooking methods and dietary replacements.
A long-running study of more than 200,000 US health professionals suggests that how potatoes are prepared may matter more than the vegetable itself when it comes to type 2 diabetes risk. The research followed participants for nearly 40 years and found that eating an extra three servings of potatoes a week was linked with a modest rise in risk, while fried potatoes stood out as the most concerning form.
The study began with participants who did not have diabetes, cardiovascular disease or cancer, and they completed detailed food questionnaires every four years. Over the course of follow-up, 22,299 people developed type 2 diabetes. After accounting for a range of lifestyle and dietary factors, researchers found that each additional three weekly servings of potatoes was associated with a 5% higher risk of the disease.
Preparation method made a clear difference. Three weekly servings of fried potatoes were associated with a 20% increase in risk, while baked, boiled and mashed potatoes were not linked with a significant rise. The findings fit with earlier evidence from meta-analyses showing a stronger association between French fries and diabetes than with potatoes more generally.
The research also suggested that what replaces potatoes in the diet matters. Substituting whole grains for three weekly servings of potatoes was linked with an 8% lower risk of type 2 diabetes, while swapping in white rice was associated with a worse outcome. A separate analysis of fried potatoes and processed potato intake has pointed in the same direction, reinforcing the idea that frequency and cooking method are both important.
