Austria’s 2024 dietary guidelines spotlight legumes’ evolving health and environmental roles

Austria’s revised dietary guidance elevates legumes and their products to a dedicated category, recognising their growing importance for health and the environment amid renewed scientific interest.

Lentils, beans and chickpeas have fed people for thousands of years, but they are now attracting renewed attention for reasons that go well beyond tradition. Austria’s revised dietary guidance in 2024 gave “legumes and products made from them” their own category, reflecting both their nutritional value and their environmental advantages. Researchers say the foods are being studied more closely because their effects may extend from the gut to blood sugar and cholesterol. Harvard Health has also noted that legumes’ fibre and resistant starch can support heart health and steadier glucose levels.

One area of interest is the gut microbiome, the vast community of microbes living in the digestive tract. Legumes contain fibre and carbohydrates that are not fully broken down in the small intestine, so they reach the colon, where bacteria ferment them. That process can produce short-chain fatty acids, compounds linked to the gut lining, immunity and metabolism. Lewis C. E. Mason of Kingston University London has written on The Conversation that these microbes use legumes as fuel, although the wider health meaning of the changes seen in laboratory and animal studies is still not fully understood.

There is also reasonably strong evidence that legumes can blunt the rise in blood sugar after a meal. A review of 65 clinical trials involving 2,102 adults with and without type 2 diabetes found that eating legumes was associated with a smaller post-meal glucose increase. Healthline and Cleveland Clinic both describe legumes as useful for blood sugar control, largely because they are digested slowly and contain fibre and resistant starch. Longer-term benefits are less certain, however, and researchers have said much of the evidence on broader glucose control remains low or very low in certainty.

Cholesterol is another area where legumes appear to help, albeit modestly. A 2024 analysis of 24 studies involving 1,938 people found small reductions in both total cholesterol and LDL, the so-called “bad” cholesterol that contributes to plaque build-up in arteries. Harvard Health and Cleveland Clinic have both linked beans and lentils with improved heart health, but experts caution that they are only one part of an overall diet aimed at lowering cardiovascular risk.

Legumes may also make meals more filling. A systematic review and meta-analysis of short-term feeding studies found that people generally felt fuller after eating them than after similar meals without legumes. That does not prove they lead to less food being eaten later, or that they directly cause weight loss. Still, their combination of protein and fibre makes them a practical addition to meals, whether in soups, curries, salads, hummus or stews. There is even an environmental case for eating more of them: legume plants live in partnership with bacteria on their roots that can convert atmospheric nitrogen into a form plants can use, helping to improve soil fertility and reduce the need for synthetic fertiliser.
