Sugar is often treated as a single ingredient, but the chemistry is more varied than that. Nutritionally, the two plant sources are broadly alike, even if the raw material and processing methods can differ. Darker sugar, the article adds, may be produced by retaining or reintroducing molasses, or by a less refined method that leaves more trace minerals behind, though not in amounts that make a meaningful difference to health.

That basic distinction matters because many foods contain not just sucrose, but a wider range of sweeteners. Healthline notes that beet sugar and cane sugar are both essentially sucrose, despite differences in production and appearance, while its explainer on sucrose, glucose and fructose describes sucrose as a disaccharide, meaning it is built from one glucose molecule and one fructose molecule. Fructose deserves particular caution. The important distinction is between added fructose and the sugar naturally present in whole fruit. Medical News Today notes that fruit comes with fibre, vitamins, minerals and antioxidants, which slow absorption and soften the blood sugar response. In practice, that means the health effects depend less on the name of the sugar itself than on the food in which it appears and the total amount eaten. For people with diabetes, the article warns, fructose still calls for care, since its by-products can be converted back into glucose when insulin is lacking.
