Eating more green vegetables could help regulate blood sugar levels more effectively

New research suggests that fibre-rich leafy and cruciferous vegetables like broccoli and kale may support insulin sensitivity and glucose control, highlighting the importance of a varied vegetable-rich diet in managing diabetes risk.

Green vegetables may do more than round out a healthy plate: they can also help the body handle glucose more smoothly. Broccoli is one of the clearest examples. Research on broccoli sprouts published in the National Library of Medicine’s PubMed Central found that sulforaphane, a compound released when cruciferous vegetables are chopped or chewed, is absorbed in the body and acts on several pathways linked to disease prevention. Not all findings are perfectly uniform. Leafy greens such as kale and other dark green vegetables also stand out because they deliver fibre and magnesium with very few carbohydrates. Butternut squash, meanwhile, provides pectin, a soluble fibre that can form a gel in the gut, slowing digestion and helping glucose enter the bloodstream more gradually.

The common thread is not a single miracle vegetable but a pattern of eating. Fibre, plant protein and certain bioactive compounds can all help moderate post-meal sugar spikes, support the gut and reduce the strain on insulin response. For people trying to lower their diabetes risk or improve glucose control, the strongest message from the research is to make vegetables a regular, varied part of the diet rather than treat them as one-off remedies.
